Food Friday: Texas Caviar

Here is a super easy and very yummy dip!

Texas Caviar
12 oz shoepeg corn-drained
15 oz can black beans drained and rinsed
1 large tomato diced
1/2 cup chopped onion
1/2 cup chopped green pepper
1/2 tsp. minced garlic
1 diced jalapeno pepper

Combine all of these ingredients.

Dressing:
3/4 cup italian dressing
2 tablespoon chopped fresh cilantro
3/4 tablespoon hot sauce (I leave this out)
1/2 teaspoon of back pepper and chili powder

Pour dressing over veggies, chill and serve with corn chips (I like to use Tostitos Scoops to scoop up all of the goodies!)
